Well, this is rather highly subjective, but...
Good remake "Against All Odds", remake of "Out of the Past."
"Out of the Past" is a classic film noire, which is set in its time and place as is the remake (set in Southern Cal. power brokers and entertainment (football).
Bad remake "Charade"[2003], remake of "Charade"[1963]. Actors in latter below quality of the original, and it seems to lack the originals early 60's easy going charm.

Good remake: Of Mice and Men, remake with Gary Sinise and John Malkovich of the 1939 (?) version with Lon Chaney Jr. and Burgess Meredith.

The Maltese Falcon (1941) starring Humphrey Bogart was actually a remake of an earlier film of the Dashiell Hammett novel made in 1931. I've never seen the original (nor has anybody else I've ever spoken to) but among remakes, Falcon is probably the most prominent on those ubiquitous "classics" lists (including my own).

The original "The Haunting" (1963 I think, b+w) is an absolute classic using camera work, creative use of lighting etc but very few SFX to achieve a truly atmospheric supernatural thriller - the ultimate 'haunted house' story, for my money.
By contrast, all those involved with the recent remake starring Catherine Zeta Jones should be cut into small pieces and boiled in oil.

Have to disagree on that one- found nothing at all interesting in the remake (not that the original was a classic).
Bad remakes: "Gloria"(1999) with Sharon Stone ; let's take what made the heroine in the original so good- older, faded, knocked around just trying to get by in a tough world- and make her young, wealthy, and glamorous.
"The Jackal" - no further comment necessary.

I'll second that regarding "The Jackal." The original was so much better, not to mention interesting.
