I was just wondering about the relationship between Elves and Men, and the Valar. Are the Children of Iluvatar Elves and men or the Valar?

Elves and Men are the Children of Iluvatar. Elves are called the Firstborn, and Men are the Afterborn.

Yes, and the Valar were created by Iluvatar (Eru) before the Children of Iluvatar (elves & men).

I always thought they were all Children of Iluvatar.

The Children of Illuvatar are Elves, Men, and later even the Dwarves were counted among them. The Valar are not Children of Illuvatar but his servants. They were each given a charge in nature by him and were to watch over the earth and the Children.
Th children of Iluvatar were the Elves, the Valar were known as the Ainur, the Holy Ones

Iluvatar considered the Dwarves his adopted children (because they were created by Aule, who was so anxious for the Firstborn to awaken that he "made" a race of his own), and predicted that there would be much strife between them and the Elves.

That is correct. Only Illuvatar could give them free will.
