Fantasy - I believe recently, one studio or another has acquired the rights to Narnia. Nothing's in production yet though.
Obviously, the Potter films will continue. It's a pity that with so much revenue, they're going to be cemented as the "definitive" films of Harry Potter... because while the film of Philosopher's Stone was very well done in many respects, it never goes beyond being a great adaptation and into the realm of being a great movie.
From the sci-fi perspective, I believe Orson Scott Card's Ender's Game is in pre-production. Don't know who's attached to the project, though.
There has been talk - just talk, mind you - of possibly doing a Wheel of Time miniseries. And obviously, there's the Dinotopia mini coming out this weekend.

Hitch Hikers guide to the galaxy might come out some time this decade - maybe.

Well Douglas Adams was working on a screenplay for the HHGTTG adaptation when he, um, hit the long dark tea-time of the soul, so to speak. The project is in Development Hell right now.
And if it's ever in development, will somebody please have the sense to hire Terry Gilliam to direct?
