What happen to him? He was born after Beren and Luthien's return. He was Elven, Human and Maia. Was he re-embodied in Valinor?

He was referred to as a half-elven, so he had the choice. Being the ruler of an elf kingdom, it would seem he chose to be an elf.

Eärendil and Elwing, and Elladan, Elrohir and Arwen were also given the choice. I don't know if Dior was or not.

It is never stated that Dior was granted a Choice. The first o the Pereldar granted Choices were Earendil and Elwing. Dior was dead by that time. Anyone with any mortal blood was mortal unless granted some other Doom by Manwe (according to the Judgement of Manwe). This would tend to imply that Dior was mortal.

That is a good point. Dior must be something beside a ´mere mortal´.

Because Dior was Thingol's heir. Beren, Lúthien, Thingol and Melian had all died or left Middle-earth, Dior is your natural choice. And whatever Dior's fate, he was the first of the Half-elven, which Tar-Elenion acknowledges. His comment about Dior being a mortal I am sure is only referring to his fate.
There was also Elwe's brother, and his children (including Celeborn), and Nimloth, but so little is known about most of these people that you can't bring them into the who-should-have-ruled debate. Nimloth had married Dior.

There was no reason for the Sindar NOT to accept Dior as Thingol's Heir. After all, the Noldor and Sindar who survived the fall of Gondolin accepted Tuor as their leader. No one seems to question that, yet some people have a difficult time accepting a mortal Dior as the ruler of Doriath.
His life span was probably not that of a normal man. In Unfinished Tales, there is a note which says that Elrond and Elros would have lived very long lives had they not been given a choice between kindreds.
