Okay, I know that Dooku, Maul, Vader and Palpitene were sith. But was Grevious? I didn't think he was, but I was just wondering.

No, Grievous was a general. He just collected lightsabers ;). Bounty Hunters also are known to collect lightsabers from all the jedi they killed/assassinated. Not that there's much of different end result between "killed" and assasinated" :p.

From what I read in the Labyrinth of Evil by James Luceno During the war with the rival Huk, the Republic is called in to settle the dispute. Because the Huk world is rich in natural resources compared to the barren Kalee world, the Republic sides with Huk and sends several Jedi Knights to intervene on their behalf. Grievous, not yet a cyborg, and his armies are made to appear as the aggressors and their homeworld is left in ruins.

He then is some how drawn into the sepratist forces, I can't remember how exactly, he starts as an enforcer for the bankers clan but eventually becomes a general.
